This sparkling wine, on the list to join the Cava de Paraje category, aims to reflect the personality of Alt Penedès’ high altitude vineyards using Parellada, a light, subtle varie-ty which is widely grown in the area. Grapes are sourced from an 85-year-old vineyard and then blended with some Macabeo. After seven years of aging, the wine has developed a complex nose with toasty aromas followed by a broad, almost voluptuous palate with toasty character and a serious, slightly bitter finish. 17.5 points
